It is best to cook them directly from the freezer without defrosting. This ensures the pastry remains crispy and doesn't become soggy or burst. Popia Pepes typically contains a spicy chicken or meat filling based on the traditional pepes style.

Deep Frying (Recommended)
This method is favored by manufacturers like Mamart Food for achieving a golden-yellow, non-oily finish.
  • Heat Oil: Preheat vegetable oil to 170°C – 180°C over medium heat.
  • Fry: Carefully place frozen popia into the hot oil. Do not overcrowd the pan.
  • Duration: Fry for 5–8 minutes until the exterior is deeply golden brown.
  • Drain: Place on paper towels for 1–2 minutes to absorb excess oil.

Air Frying

  • A mess-free, healthier option that still provides a good crunch.
  • Preheat: Set air fryer to 180°C – 190°C (350°F – 375°F).
  • Prepare: Lightly brush or spray the frozen popia with a small amount of oil to prevent a dry, "anemic" look.
  • Cook: Arrange in a single layer and cook for 8–12 minutes.
  • Flip: Turn them halfway through the timer for even browning.
Oven Baking
  • Preheat: Set your oven to 200°C (400°F).
  • Arrange: Place on a tray lined with parchment paper. Brushing with oil is recommended for better color.
  • Duration: Bake for 15–20 minutes, turning once at the 10-minute mark.

Cooking Tips

  • No Defrosting: Frying directly from frozen prevents the "menggerutu" (bumpy) texture on the skin and keeps the filling from leaking.
  • Oil Temperature: If the oil isn't hot enough, the popia will absorb too much oil; if it's too hot, the skin will burn before the filling is heated through.
  • Resting: Let the popia rest for a minute after cooking; the internal temperature of the spicy meat filling can be extremely high.
