EXAMPLE PREPARATION - SOFT SHELL CRAB WITH COCONUT DRESSING

1. If you buy frozen soft shell crabs, they are almost certainly 'dressed' (cleaned) and ready to cook.
2. Preheat oven to 200°C. Line a tray with baking paper.
3. Place crab pieces onto prepared tray and bake for 20 to 25 minutes, turning once, until golden.
4. Meanwhile, process remaining ingredients in a food processor until smooth.
5. Transfer to a serving bowl. Place crab onto a platter and sprinkle with mint and coriander. 
6. Serve with dressing.

Storage:
Keep frozen at or below -18°C.
