EXAMPLE PREPARATION - ASSAM SAMBAL FISH
- Grind the sambal paste ingredients until fine and set aside.
- Heat oil in a wok or frying pan. Add the sambal paste and fry over low heat for 3 minutes or until thickened and fragrant.
- Add the tamarind juice, tomatoes puree, salt, sugar and stir fry for 2-3 minutes.
- Add the vegetarian fish slices and stir well to ensure the vegetarian fish
- slices are coated with the sambal paste.
- Dribble lime juice and serve immediately.
2 lemongrass and 25g ginger or 15 shallots, chopped
